It’s been raining for days now and my garden is a waterlogged mess! It’s so soggy that I haven’t had much interest in picking my vegetables.
This rainy weather is really putting me in the mood for soup. The colorful bags of dried peas and lentils sitting on my kitchen counter (courtesy of the USA Dry Pea and Lentil Council) are begging to be made into soup.
I find that yellow split peas are just plain happy, creating bright soups and dishes with a mellow sweet flavor. Similar to green split peas, yellow peas are full of vitamins, minerals, fiber and protein, making them especially healthy.
